Vanilla soufflé

Soufflé alla vaniglia

Vanilla soufflé is a basic recipe which can be adapted for other flavours. Preheat the oven to 200 C / 400 F. Grease a soufflé dish with butter and sprinkle with sugar. Pour 120 ml / 4 fl oz of the milk into a small saucepan, add the sugar and a pinch of salt and bring to the boil. Remove the pan from the heat, add the vanilla pod and leave to infuse for 15 minutes, then remove the vanilla pod. Put the flour in a small saucepan, stir in the remaining cold milk and gradually add the hot milk. Bring to the boil and cook, stirring constantly, for 2-3 minutes. Remove from the heat and leave to cool slightly. Stir in the egg yolks, one at a time, then stir in the butter. Stiffly whisk all the egg whites in a grease- free bowl, then gently fold into the mixture. Spoon the mixture into the prepared dish so that it is two-thirds full and bake for 30 minutes. Serve immediately.

  • 1 vanilla pod, slit
  • 35 g / 1 1/4 oz plain flour
  • 3 eggs, separated
  • 1 egg white
  • salt
