Greek chicken

Pollo alla greca

Gently rub the outside of the chicken with salt and pepper and put a pinch of each in the cavity. Whisk 4 tablespoons of the oil with the lemon juice and half the oregano in a bowl, seasono, add the chicken and leave to marinate for at least 2 hours. Preheat the oven to 180 C / 350 F. Drain the chicken, reserving the marinade, and place in a roasting tin with the remaining oil. Roast, turning frequently and basting with the reserved marinade, for 1 1/2 hours until tender. Serve sprinkled with the remaining oregano.
